Christine’s Strawberry Short Cake Recipe

Well it’s been awhile since I have posted, and I Apologize!  Well it’s Almost Strawberry season. 

I know you’re thinking another Strawberry short cake recipe…. Well I figured I would share mine with everyone since my family seems to like this one. You can use the strawberries over any store-bought Angel food cake or twinkies😊 I also use a Vanilla Bean recipe from Pinterest for the topping instead of using whipped cream.

Items you will need:

2 Bowls with Covers/Lids

1 Colander (For the Strawberries)

Food Chopper (Pampered Chef Food Chopper)

Prep Knife

Mixing Spoon

Food Items you will need:

2 containers of Strawberries will equal 4 cups of chopped strawberries (Pampered Chef Food Chopper)

2 cups of sugar

For the Frosting you will need to follow the Vanilla Bean Recipe Provided.

1 whole vanilla bean pod

1/2 cup butter, softened*

1/2 cup shortening

2 tbls warm water (2-3)

1 lb confectioners’ sugar

Well let’s get started.

1. Rinse your strawberries

2. Cut all of the stems off of the strawberries.

3. Add about three strawberries so they fit in the food chopper. You will want to chop them very fine (See Picture for size).

4. Slowly add in sugar. You do not want it to be to runny so don’t add all the sugar in at once.

5. If it isn’t to runny then add in the remaining sugar.

6. It should look like the picture below when you are finished. About 6 cups. Cover and place in the refrigerator to chill.

7. Next work on your Vanilla Bean frosting. https://www.aroundmyfamilytable.com/vanilla-bean-frosting/

8. Once chilled you can spruce up your cakes etc. however your heart desires! ENJOY!!!
